Perfect Steak

How to cook the perfect steak...

According to chef and food writer Matthew Fort, the best way to cook a steak is in a heavy duty cast iron pan (although others prefer using a grill or griddle):

  • The steak should be 3-4cm thick.  Make sure it's at room temperature and has been outside of the Athleat vacuum packaging for at least 15 minutes before cooking, then rub it in oil.

  • Heat the pan for several minutes over a high flame so it is extremely hot.  For sirloins and other cuts with render (fat) - while the pan is getting hot hold that side of the steak on the pan, so it runs and then crisps.

  • Once the pan is searing hot, plonk in the oiled steak.  If you want it rare, sear for two and half minutes on one side without touching it, then flip it and sear for another two minutes.  Switch off the heat and leave it in the pan for five minutes before serving.

  • For medium-rare sear for three minutes a side, turn off the heat and leave for four minutes before serving.

  • For medium, sear for four minutes each side, kill the heat and leave for three minutes.

  • For well-done, sear for six minutes a side and leave for one minute.

  • Finally, whatever your choice, season the steak and enjoy!
