Best ‘Guac’ EVER!
This is a traditional guacamole recipe and it is slightly runnier than the Tex-Mex version you may be used to. You can literally have this as a side dish to any meal; our favourite (other than tortilla chips of course) is any of our amazing grass fed beef steaks. Perfect combo!
We recommend making a big batch because once you start you just can’t stop, but remember it doesn’t stay fresh for too long and will start to go brown after a short period of time…so eat up!.
A quick word of warning for this recipe – you will never want to buy supermarket guacamole again!
Servings: 6
Prep Time: 15 Minutes
Cook Time: 0 Minutes
Ingredients:
- 1 onion, peeled and finely chopped
- 4 mild chillies (or hot if you can handle it!) de-seeded and finely chopped
- Big bunch of coriander, chopped
- 4 tomatoes, peeled, de-seeded and finely chopped
- Salt and pepper
- 2 tablespoons water
- 2 tablespoons freshly squeezed lime juice
- 3 lovely ripe avocados, de-stoned and peeled
The Method (this is a simple one!)
- Using a processor or pestle and mortar (it needs to be a big pestle and mortar) blend the onion, chillies, coriander, tomato and salt into a fine paste
- Add the water and lime juice to make a loose paste
- Mash the avocado in at the end and stir well to combine all the ingredients and serve with whatever you fancy!
