Go Greek With This Tasty Beef Casserole

Ingredients
• 1000g Diced Beef
• 2 tablespoons of your favourite oil (olive/rapeseed/coconut)
• 2 Medium Red Onions
• 1 Garlic Clove, finely chopped
• 4 tablespoons Balsamic Vinegar
• 1 x Cinnamon Stick
• 1 x Can of high quality chopped tomatoes
• 1 x tablespoon ground cumin
• Optional – 2 x cloves and 1 x bay leaf
• 1 teaspoon Honey
• 1 tablespoon plain flour
• Some orange zest
• Selection of seasonal vegetables
• 150ml red wine
• 150ml beef stock
The Method
1. Pre heat oven to 140⁰C and cook diced beef in oil until browned. Transfer to a casserole dish and cover in the seasoned flour to coat the meat. Place in oven
2. Add the chopped onion and the rest of the oil to the pan and soften, add the vinegar and simmer for about a minute
3. Add the garlic and cook for 2 minutes
4. Add the tomatoes to the pan and heat until simmering. Then add all the ingredients to the casserole dish with the beef
5. Add the honey, cinnamon, cumin, cloves & bay leaf, and orange zest
6. Pour in the wine into the pan and simmer for 1 minute
7. Add the wine to the dish along with beef stock, cover over and cook for 2 hours in the oven
