How To Cook The Perfect Steak

A well cooked grass fed steak is a thing of beauty and we want to give you a foolproof way of cooking your favourite steak to perfection. So below we have given you step by step instructions for each delicious cut of steak to make sure you get the most from them!

We always recommend cooking your steak either rare or medium rare to let the true flavours and textures of the steak naturally come out. The cooking instructions are based on a steak weighing 8oz and being approximately 1” thick for all cuts apart from the Minute Steak and Fillet Steak. Please adjust cooking times for larger or smaller steaks as required.

Beef fillet steak

FILLET STEAK

  • Allow the beef to breathe by taking it out of the vacuum pack and place on a plate. Let the steak come up to room temperature then rub with oil and season to taste.
  • Get your pan or BBQ as hot as it will go then place the steak on there for 1 minute on each side (including the “edges”) to seal the whole outer surface.
  • Now place your Steak in a preheated oven at around 150 deg for 5 mins (for super rare) 7 mins (for medium) or more if you want (although we don’t recommend it!)
  • Remove the steak from the oven and place on a plate and cover with foil for 5 minutes to allow the meat to relax and for the juices to return.
  • If you are feeling adventurous you can try a beef wellington or even very thinly slice it raw as a Carpaccio!

Ribeye steak

SIRLOIN/RIBEYE/RUMP STEAK

  • Allow the beef to breathe by taking it out of the vacuum pack and place on a plate. Let the steak come up to room temperature then rub with oil and season to taste.
  • Get your pan or BBQ as hot as it will go then carefully place the steak on the cooking surface.
  • Turn the steak every minute to achieve that caramelised outer surface and repeat so that each surface has been cooked twice if you would like a rare steak or three times for medium rare.
  • Remove the steak from the pan and place on a warm plate and cover with foil for 5 minutes to allow the meat to relax and for the juices to return.

Minute steak

MINUTE STEAK

  • Allow the beef to breathe by taking it out of the vacuum pack and place on a plate. Let the steak come up to room temperature then rub with oil and season to taste.
  • Get your pan or BBQ as hot as it will go then place the steak on there for 1 minute on each side (hence the name Minute Steak!)
  • Remove the steak from the pan and place on a warm plate and cover with foil for 5 minutes to allow the meat to relax and for the juices to return.

Lamb steak

LAMB STEAK

  • Lamb Steaks need to be treated just like Beef to get the most from them! We recommend Lamb being served as medium or medium rare.
  • Allow the Lamb Steaks to breathe by taking them out of the vacuum pack and place on a plate. Let the steak come up to room temperature then rub with oil and season to taste.
  • Get your pan or BBQ as hot as it will go then place the steak on the cooking surface.
  • Repeat this three times for medium rare or four if you prefer medium.
  • Remove the steak from the oven and place on a warm plate and cover with foil for 5 minutes to allow the meat to relax and for the juices to return.

A few more top tips to make sure your steaks are perfect!

  1. Use a very sharp knife to cut into your steak after cooking. A blunt knife with “shred” the meat rather than cutting it.
  2. The resting part of cooking before and after is very important and make sure you follow the instructions. It makes a big difference!
  3. Some people prefer to season the meat after cooking but we feel that the seasoning before makes for tastier steak!
  4. Get yourself a good quality heavy based pan/griddle.
  5. Get your pan as hot as you possibly can and don’t add in any oil to it (you are oiling the steaks instead).
  6. Always err on the side of caution when cooking a steak. We always suggest that you cook your steak until you feel it is underdone then take it off the heat. The residual heat in the steak will continue to cook it after you have taken it off the pan. You can always cook it some more if it really is underdone. Once you have overcooked a steak there is no going back!
  7. If you are cooking your steak on a BBQ then always allow your coals to turn that dusty white colour and for the flames to have died down before you place the meat on the coals. Otherwise you will end up with a charcoaled outside of your steak!
