This is a great cut for low and slow cooking and has now become a mainstay in specialty restaurants as people start to understand how good this can be is treated correctly!
There are two parts to the Brisket, the “Flat” and the “Point”. We have chosen to offer the flat of the brisket. This is the best cut for the low and slow cooking it’s also often where pastrami can be made from if you are a budding “curer”.
The slow cooking process means the meat has plenty of time to become tender. All the connective tissue in this cut would normally make this an almost inedible cut of meat if you were to cook it like a steak, but when you barbecue, all the collagen fibers in the brisket break down slowly, making the whole cut remarkably tender and delicious. Brisket is ideal for BBQ’s and smokers.
