This grass fed beef cut though not commonly used is similar to silverside, but the meat is cut so the shape resembles a salmon as the name suggests. It is very lean and with no sinew is a great cut for getting the most protein for your money.
It looks similar to a fillet steak and can be just as tasty! But beware, overcook it and it might get a little tough. You can also cook it “slow and low” to get even more flavor from it.
