Our grass fed beef is allowed to hang and mature naturally for a minimum of 28 days before being passed onto our master butchers who classically trim the joints and bind them (with butcher’s twine) to keep their shape during cooking.
This is a very lean roast and therefore has a high protein content, best cooked nice and slow to really develop the flavour. Perfect for a Sunday Roast with its deep beef flavour which is intensified by roasting in a hot oven.
